The trend of local ingredients, freshness and the increase of farmers markets has had a profound effect on how we think about our food; we’re becoming more sophisticated in our tastes and our knowledge of ingredients. One of the major benefits of the food trend is its much easier for a customer to really zero-in on the exact product that suits their tastes and/or dietary restrictions. Even ten years ago it was considerably more difficult to find, say, a box of artisan chocolate containing things like lemon thyme and green tea flavored truffles. Determining if a product was gluten-free or not, like a box of toffee was all but impossible and caused based shopping, Fair Trade was almost as difficult. Thanks to the building awareness in the environment, organic and local harvest with a nice assist from technology – we can now give and receive food products that strike the exact right note.
